Tuscan olive oil : Extra Virgin and Extra Creative!!

Tuscan olive oil is a particular kind of the wide category of extra virgin olive oil.
To be called Tuscan extra virgin, the olive oil needs some particular features, which are not all oils posses.
First of all, the Tuscan olive oil has to be harvested manually and has to be processed within a few days later, secondly , Tuscan olive oil has to be extracted during a cold and mechanically process, thirdly the Tuscan olive oil cannot be produced by any process other than : washing, decanting (settling), centrifugation and filtering and finally : the Tuscan extra virgin olive oil has to have a percentage of oleic acid which counts for less than 0.6%.
